Looking for a delicious lunch to take out on the boat or entertain at home? Look no further than this prawn sandwiches.
- 200gm cooked prawns
- 3 teaspoon whole egg Mayonnaise
- 1/2 stick celery, finely chopped
- 1/2 tablespoon finely chopped fresh parsley leaves
- 1/2 tablespoon lime juice
- 1/4 teaspoon grated lime zest
- 1 ripe avocados, sliced
- 8 slices crusty white bread (sourdough is best!)
- Combine all ingredients except bread in medium bowl, then spread your little friends in their delicious mayonnaise sauce on 4 bread slices.
- Top with remaining bread, and congratulate yourself on a job well done.
